Creamy Cajun Pasta

My husband and I love this recipe! We found a version of it online one night when we had thawed sausage out for dinner but weren’t sure what to do with it. 30 minutes later I had whipped this up and it was gone less than 10 minutes later! If you like creamy pastas and don’t mind a little kick, you’re going to love this dish!

Creamy Cajun Pasta

Prep time: 5 minutes | Cook time: 30 minutes

Total time: 35 minutes

Ingredients:

  • 14 oz of hot smoked sausage*
  • 2 cups of your favorite pasta (I used a mix of shells and rotini)
  • 1 14 oz can of diced tomatoes
  • 3 cups of chicken broth
  • 4 tablespoons of Cajun seasoning
  • 8 oz of cream cheese
  • 2 tablespoons of dried parsley
  • 1 tablespoon of red pepper flakes

Recipe:

  1. Cut sausage into slices.
  2. Sear both sides of sausage slices in a large pan, 3-4 minutes a side.
  3. Remove sausage from pan.
  4. Using the same pan, pour can of tomatoes, pasta, chicken broth, and two tablespoons of Cajun seasoning into pan.
  5. Stir until mixed completely, and bring to a boil.
  6. Reduce heat to a simmer, cover, and cook for 15 minutes. Stir occasionally.
  7. When timer goes off, check pasta to ensure it is cooked through to your liking (I cook mine all the way through, but this recipe will also work well with your pasta cooked it Al dente).
  8. Add cream cheese and mix until melted and incorporated completely.
  9. Add in remaining two ounces of Cajun, dried parsley, and red pepper flakes. Mix until combined.
  10. Toss in sausage.
  11. Enjoy!

*If you don’t like sausage, this can easily be subbed for simply-seasoned chicken!
