Salmon Avocado Bites

This recipe is a godsend! Such a good mix of health foods and so tasty. And, so easy! You’re going to love this one!

Salmon Avocado Bites

Prep time: 5 minutes | Cook time: 25 minutes

Total time: 30 minutes

Ingredients:

  • 12 oz smoked salmon (my favorite is the one from Costco)
  • 2 cucumbers
  • 1 large avocado
  • 2 lemons
  • Salt
  • Pepper
  • Garlic powder
  • Paprika
  • Dill

Recipe:

  1. Preheat oven to 350 degrees.
  2. Line a baking tray with foil with enough extra to wrap around the salmon.
  3. Spray the foil with cooking spray.
  4. Place the salmon on top of the foil.
  5. Season the top of the salmon with cracked black pepper, salt, and garlic powder (to taste).
  6. Zest one lemon on top of the salmon.
  7. Slice zested lemon and place slices on top of salmon.
  8. Cover salmon with foil and bake in the oven for 25 minutes.
  9. While the salmon is baking, wash and cut both cucumbers into 1/4 to 1/2 inch slices.
  10. Cut open avocado and mash.
  11. Mix in pepper, salt, paprika (to taste), and lemon zest (to taste) into the avocado.
  12. Scoop avocado on top of cucumber slices.
  13. When salmon is done baking, using a fork, shred salmon into little pieces.
  14. Scoop small portions of salmon on top of each cucumber/avocado bite.
  15. Zest lemon on top of bites (to taste), and dust paprika and dill on top of bites.
  16. Enjoy!
