Creamy Cayenne Fettuccine with Chicken

This recipe is hands down my favorite pasta dish.

It was inspired by my favorite dish at Abrusci’s Fire & Vine in Wheat Ridge, CO. (If you’re in Colorado and like Italian, you HAVE to go there.)

This is a spicy pasta dish that is the perfect amount of creamy and spicy. If you’re not a spice person, feel free to reduce the amount of spice added, to taste. Also, if you don’t want to add the chicken, this recipe would be just as good without it and would then be a vegetarian dish.

This pasta is more of a loosely creamy, versus a thick creamy like a cream cheese sauce.

I love love this dish and would eat it every night if i could. Enjoy!

Creamy Cayenne Fettuccini with Chicken

Prep time: 15 minutes

Total time: 35 minutes

Ingredients:

  • 12 oz Fettuccine pasta (I use the GF one from Barilla)
  • 2 Chicken Breasts
  • 2 tbsp Chili Garlic Sauce
  • 1 tbsp Red Cayenne Pepper Powder
  • 1 tbsp Italian Seasoning
  • 1 tbsp Garlic Powder
  • 1 Large Onion, Diced
  • One Carton of Grape Tomatoes, Halved
  • 1 1/2 cups Heavy Cream
  • 1/2 cup Pasta Water
  • Flour (I use the GF flour linked here)
  • Cilantro
  • Salt
  • Pepper

Recipe

  1. Boil the pasta in salted water
  2. Cube the chicken breasts
  3. Season the chicken with salt and pepper all over
  4. Brown the chicken in a large sauce pan
  5. When the chicken is browned on all sides, add chopped onions into pan and allow to soften
  6. When onions are softened, season all contents of pan with Italian Seasoning and Garlic Powder
  7. Add heavy cream into pan and cover all contents of pan with heavy cream
  8. Stir in chili garlic sauce and red cayenne powder
  9. Allow to simmer
  10. When sauce is beginning to thicken, add tomatoes into pan
    • Add in pasta water as necessary to loosen the sauce, if needed
    • Add in flour as necessary to thicken the sauce, if needed
  11. When pasta has boiled completely, reserve 1/2 cup of pasta water and drain pasta
  12. When the consistency is saucy, and not too runny or thick, pour pasta into pan and toss to cover completely
  13. Top with cilantro (optional)
  14. Enjoy!
