Drozdwoka Loaf Cake

Recently, I have been thinking a lot about my time spent overseas on mission trips, and missing that opportunity for service. That got me thinking about some of the recipes I was fortunate to take home with me from these trips!

This recipe is from my most recent mission trip to Poland. My friend Miriam shared this one with me, and while I haven’t made it in a few years, I remember it being so delicious.

Today, I would have to alter the recipe for my newly discovered gluten allergy, but I wanted to share the original recipe in case it interests anyone.

This is a more dense loaf cake, pronounced drowe-shoove-kah (don’t quote me on that) and is so tasty. Because it’s a heavier dessert, you can only really eat once slice at a time, but its sweet and fruity and pairs perfectly with a more savory meal to balance everything.

Drozdwoka Loaf Cake

Prep time: 2.5 hours

Total time: 4 hours

Yield: 2 loaves

Ingredients:

  • 5 2/4 cup of wheat flour 
  • 1 3/4 cup sugar 
  • 1 packet yeast
  • 2 cups warm milk 
  • 6 tbsp of melted butter
  • 1 whole egg + 2 yolks 
  • 1 tablespoon of vanilla paste or extract 
  • Any fruit

Recipe

  1. Mix yeast and 2 tablespoons of sugar, leave for 5 minutes
  2. Mix 4 ¼ cup flour, 1 cup of sugar, yeast/sugar mixture, milk, 4 tbsp butter, eggs, vanilla extract together and make a soft and flexible dough
  3. Cover dough with a cloth and leave to double in volume for an hour and a half
  4. After risen, split dough in half and place in two bread dishes
  5. Preheat oven to 350
  6. Let sit in dishes for 20-30 minutes
  7. Make cuts diagonally on top of dough for rising room 
  8. Mix fruit with 1 cup flour, 2 tbsp cold butter, and remaining sugar
  9. Sprinkle top of dough with sugar
  10. Split fruit mixture in half and top both loaves with fruit
  11. Bake for 1 hour and 15 minutes
  12. Check with a toothpick to ensure it is not doughy in the middle. Because this is a more dense cake, depending on your elevation, it may take more or less time to bake. Watch carefully.
  13. When baked fully, allow to rest and cool for 15 minutes.
  14. Take a slice and top with a slice of butter. (optional)
